Mrs. Agnes Marshall (1855-1905) was a celebrated cook of her day, known for her four books on cookery and ice cream. She ran a domestic staff agency, sold cooking equipment, and patented an ice-cream machine. She campaigned for better food hygiene and invented the edible ice-cream cone. An exhibition entitled "Scoop of the Century" will celebrate her life and work at Gasholders in Kings Cross, and Grub Street is producing a facsimile paperback edition of her most popular work, "The Book of Ices."

Mrs. Agnes Marshall (1855-1905) was a renowned cook during her time, akin to today's TV celebrity chefs. She authored four books: The Book of Ices in 1885, Mrs. A.B. Marshall's Book of Cookery in 1888, Mrs. A.B. Marshall's Larger Cookery Book of Extra Recipes in 1891, and Fancy Ices in 1894. These books are highly regarded as some of the finest in their genre, particularly those focused on ices, as Mrs. Marshall was considered an authority in this field. Her recipes are clear, accurate, and well-illustrated, making them easy to follow for aspiring cooks. In addition to her culinary pursuits, Mrs. Marshall ran a domestic staff agency, sold cooking equipment, and operated a successful cookery school. She even patented an ice-cream machine that could freeze ice cream in just five minutes, a significant innovation at the time.


Beyond her culinary achievements, Mrs. Marshall was actively involved in advocating for better standards of food hygiene. She toured extensively, giving lectures and demonstrations of her techniques to large audiences. Her dedication to spreading knowledge about cooking and food safety has earned her recognition as the inventor of the edible ice-cream cone, which was mentioned in her 1888 cookery book. Prior to this invention, ice cream was served in glass "licks." Unfortunately, her remarkable life was tragically cut short when she fell from a horse in a riding accident at the age of 49. As a result, Mrs. Marshall has been somewhat neglected by historians and is not as well-known as Mrs. Beeton, a famous cookbook author of the same era. However, this may change with an upcoming exhibition titled "Scoop of the Century" at Gasholders in Kings Cross, which will run from mid-June to September. The exhibition will explore the history, science, art, and mythologies of ice cream, celebrating the life and work of this incredible culinary pioneer.
