The Herbfarm Restaurant, founded by Ron Zimmerman and Carrie Van Dyck, is a culinary gem that blends the flavors of America's first true "farm-to-table" restaurant with the captivating story of its creation. The initial offering was a single noon seating that began with a garden tour led by Carrie, followed by a nine-course chef-selected menu with wine pairings. Each dish told a daily story in six or nine sequential dishes, showcasing the bounty of the garden, wilds, farm, and sea. Unlike other restaurants that claim to be "farm-to-table," The Herbfarm Restaurant first found the food and then designed the menu. Every ingredient, from the protein to the main vegetable, was local, and even olive oil and lemons were not used until Oregon olive orchards blossomed. There were no supplements or extra charges, as guests were charged in advance and knew the exact cost of the experience. "The Spirit of the Herbfarm Restaurant" is a delightful blend of memoir and cookbook, written, photographed, and largely designed by Ron Zimmerman before his passing in 2023. It celebrates the history of the restaurant, the unique seasonal dishes and recipes, and the beautiful photography that captures all occasions.
